Slow Cooker Beef Curry

This beef curry was absolutely divine. I had it in my slowcooker this afternoon and it was definitely worth the wait! My little lady had 3 servings! So all around a winner!  Because it's slow cooked, you can pretty much opt for any cut of beef to save some pennies. I opted for a diced beef packet from Lidl which was nice and cheap and it worked perfectly!  This would comfortably feed 4. We have some left over, I'd say 2 adults and 2 littles with plenty of leftovers! I served ours with basmati rice and green beans. Ingredients  400 - 600g of beef (steaks or a pre diced pack is fine)  1 pepper (red or yellow) 1 large red onion  400g chopped tomatoes (1 tin)  1 tbsp mild curry powder  1 tbsp garam masala  100ml low salt beef stock 1 tsp garlic granules  1 tbsp cornflour (if required, mixed in with 2 tbsp water to make a cornflour slurry)  How to do Dice the pepper and onion. BBQ Drumsticks and Wedges

These "BBQ" drumsticks were so morish and just a lovely dinner. My family thoroughly enjoyed this and so did I!  Ingredients  4/5 medium potatoes 1kg chicken drumsticks  100g ketchup (low salt and sugar) 2 tbsp soy sauce (low salt) 2 tbsp maple syrup  To serve with (optional) Pre-made cheesy coleslaw  Tin of sweetcorn  How to do -  Preheat the oven to 200⁰c, slice the potatoes in half, half again, half again until 8 wedges per potato. Scatter skin side down on a baking tray, drizzle with a little oil and pepper and pop in the oven.  Arrange the drumsticks evenly in the tray and pop in also, for 20 minutes.  To make the BBQ, mix the ketchup, soy sauce and maple syrup. Set aside to spread over the chicken shortly!  I drained some sweetcorn and mixed it in to some coleslaw to make it spread further.  Once the 20 mins is up, spread the BBQ sauce on the chicken drumsticks and return to the oven for 15-20 minutes until nicely ...

Meatballs

This meatball recipe simply melts in your mouth, it's delicious and my family are constantly asking for them!  The secret to getting them melt in the mouth good, is to soak the bread chunks in with the onion till it's all quite wet!  I serve this with my universal tomato sauce and pasta! Delish Ingredients  2 slices of bread (I used my soda bread)  2 onions  2-3 garlic cloves/ 2 tsp garlic granules Handful fresh parsley Pack of pork and beef mince (normally 650g) 1 egg Handful of grated cheese (optional) How to do  Grate the onions, or if you own a food processor pop them in, we want really fine wet onion-y mix. Blitz or tear up the bread slices and pop in a bowl with the onion mix to sit and get soggy.  Preheat the oven to 180⁰c and add the garlic (minced), torn up parsley, beef and pork mince, egg and grated cheese if using.
