Spiced Chicken Drumsticks with Roasted Sweet Potato & Stuffed Peppers
Bit of a fancier dinner this evening, but with nice and cheap ingredients. The flavour really comes through on this one and we thoroughly enjoyed it!
I opted for olive oil in these recipes; however, normal oil like veg or sunflower will work just as well! I just had this to hand!
I've separated this recipe individually, so you can pick and choose what you'd like to make!
Spiced Chicken Drumsticks
Ingredients
Pack of chicken drumsticks
1 tbsp olive oil
1 tsp smoked paprika
1 tsp cumin
½ tsp mixed herbs
½ tsp garlic granules
Grinding of black pepper
Juice of ½ a lemon or lime (I use the bottles from supermarkets)
Optional: ½ tsp honey for a touch of sweetness (only if littles are over 1)
How to do
Preheat oven to 200°C
Mix olive oil, paprika, cumin, mixed herbs, garlic granules, pepper and lemon/ lime juice in a bowl.
Coat the chicken drumsticks in the spice mix and marinate for 15-30 minutes (or longer if possible, I did it for a couple of hours).
Place on a baking tray and roast for 35-40 minutes, turning halfway, until golden and cooked through.
Roasted Sweet Potato Wedges
Ingredients
2 large sweet potatoes, cut into wedges
1 tbsp olive oil
1 tsp smoked paprika
Black pepper, to taste
Optional: ½ tsp cumin for extra warmth
How to do
Toss sweet potato wedges with olive oil, smoked paprika, and pepper.
Spread on a baking tray and roast at 200°C for 30-35 minutes, flipping halfway.
Stuffed Peppers with Rice & Cheese
Ingredients
2 peppers (any colour)
1 pack of pre-cooked long grain rice
1 tbsp olive oil
½ small onion
1 garlic clove
1 small tomato
½ tsp mixed herbs
1 tsp smoked paprika
Black pepper, to taste
Grated cheese (cheddar or mozzarella works well)
Optional: ¼ cup black beans or sweetcorn for extra texture
How to do
Preheat oven to 180°C. Half and deseed the peppers. Thinly slice the tomato and onion and also mince the garlic.
Sauté onion and garlic in olive oil until soft. Add tomatoes, mixed herbs, paprika and pepper. Stir in cooked rice.
Fill each pepper half with the rice mixture, top with cheese, and place in a baking dish.
Bake for 25-30 minutes until the peppers soften and cheese melts.
How I cooked this all at once -
Start by marinating the chicken.
While it marinates, prep the sweet potatoes and stuffed peppers.
Put the chicken and sweet potatoes in the oven first.
After 10/ 15 minutes, add the stuffed peppers to the oven.
Cook for an additional 30-ish mins!
Everything should finish around the same time!
