Build Your Own Granola Bowl

Image
My go too staple for breakfast! So easy to make and so so filling. It's a crime for granola bowls to be this good!  I have a layer system I follow, and you can't go wrong!  Granola - I opt for a nice freeze dried berry mix. Also adding the likes of coconut and sunflower seeds!  Sprinkle of ground flax seeds Greek/ natural yoghurt  Fresh fruit - I often go for banana as cheap and tasty! However berries are also fab!  Nut butter - 100% peanut butter is my favourite. Try Holland and Barrett or Grape Tree for affordable options! Alternatively, go for supermarkets own brand. Or you can use almond butter, goes amazing with grated apples.  Chia seeds - looks pretty and is great for you!  Optional extras - I sometimes pop some freeze dried fruit on them. Also a drizzle of honey or maple syrup is also great! Super easy and delicious!

Air Fryer Chips

Image
There's something so beautiful about taking one of the greatest creations ever and successfully executing it at home.  Can you tell I'm chuffed with my chips?  Albeit, this photo wasn't the full browning. But they were crisp and fluffy. What more can you want from chippys?  Super simple:- Potatoes, I opted for your average potatoes. Nice and affordable!  Plain flour  Salt and pepper (avoid the salt if you're using for children) Seasoning of choice, I went for oregano.  Cut your potatoes into chips like shapes. I prefer skin on, gives that rustic look and goodness of the skin. Also, I'm lazy.  Toss in a few pinches of flour until the chips are nicely coated. Add the salt, pepper and seasoning, toss again. Drizzle some oil and you guessed it, toss again so nicely coated. Empty into your air fryer, 190⁰c Air fry mode for 20 mins. I ended up doing 30 due to it being larger load. Ensure to toss/ shake regularly throughout cooking!  This pai...

Turkey Not-So-Dinos

Image
So tonight, I can't lie, I strayed away from the meal plan. Shocker, I know... When popping into Morrisons, we found two MASSIVE turkey legs for just under £6.  To put it into perspective, I got about 20 medium/ large nuggets out of one leg.  I did use a food processor for this recipe.  I tried two versions of cooking these nuggets, breadcrumbs in the air fryer and shallow fried batter. I'll be covering both!  Nuggets:-  1 turkey leg, removed from the bone and cut into 1cm cubes or below Handful of cheese blend (I use Morrisons savers) Dash of oil Grinding of black pepper I simply popped it all into a food processor and blended until it resembled that of mince meat.  Roll into small balls and flatten. You're then ready for your coating of choice! Both coatings require the nuggets to be dipped in plain flour then whisked egg. Breadcrumbs:- 2-3 slices of bread, torn into small pieces Dash of oil Oregano  Black pepper Once again, in a food pro...

Truckers Mac Cheese

Image
Enjoy this candid photo of my dinner mid mouthful, because I was like omg I need to share this.  This is not a baby friendly recipe. But rather a good filling meal for parents to enjoy! Although older ones may enjoy this!  This is a take on the classic Mac cheese but with hearty black pudding and bacon chunks. I chose the name truckers Mac cheese because, well, it sounded cool 😂 This dish consists of the cheese sauce, filling, breadcrumbs and pasta.  In regards to seasoning, I avoided any additional salt due to the saltiness of the bacon. Cheese sauce:- 50g butter  4 Tbsp plain flour  500ml whole milk 1/2 Tsp English mustard  125g cheese mix (I opted for Morrisons savers mozzarella, red leicester and cheddar mix)  Add the butter into a saucepan on a low heat and allow to melt. Once melted add in the flour and cream together, this should form a paste.  Slowly add the milk bit by bit, whisking until fully combined each time. You should see it...
